I think it depends very much on your project. Depending on what you're trying to model, you could touch several fields: psychology, sociology, economics, etc. I can't point to any specific papers, but I can suggest that you keep the end goal in mind. You'll need to strike a balance somewhere between ambitious simulation and something fun that's relatively simple for the player to comprehend.
