1. Is it safe to delete the "Dialogue Text" field from the "Dialogue Entries" template? (if I have existing dialogue)

Can I make it disappear from the inspector?

2. It would be great if I could also hide the "Script" and "Title" fields for a cleaner UI, since I always leave them empty, but I'm not sure if that is possible. Actually, how about an option to hide any of the fields the user wishes? (including "Events" "All Fields:" "Links To:")

3. Can I rename the "Menu Text", "Sequence" and "Conditions" fields to something else, and then apply it, without losing it's functionality or overriding existing dialogue fields?

No, Dialogue Text is a mandatory field. It's the primary field that conversations use.

No; perhaps you'd prefer to import into the Dialogue System from a different editor such as Arcweave or Articy:draft.
